Leftovers Reincarnated: Mashed Potato Pierogies

Last week I made a lot of mashed potatoes- like a Thanksgiving sized amount of mashed potatoes. I had greatly misjudged just how much mashed potatoes I could eat, so I packed the rest in a Tupperware and placed it in the back of the refrigerator, banishing the potatoes to leftover purgatory...but, my mashed potatoes found a new life in the form of pierogies!

Quick Mashed Potato Pierogies
Recipe from Sam the Cooking Guy's Awesome Recipes & Kitchen Shortcuts

Ingredients:
1 cup leftover mashed potatoes
2 tbsps grated chedder cheese
1/2 teaspoon kosher salt
18 won ton wrappers
butter
sour cream, green onions and hot sauce for serving

1. Bring a pot of water to a boil. In a bowl combine mashed potatoes, cheese and salt. Mix well.
2. Put about a tablespoon of the potato mixture in the middle of each wrapper. Dip you finger in a little water and lightly wet the edge all the way around. Fold over (trying to push the air out) and seal the edge.

3. Boil for about 2 minutes, or until they float.
4. Heat a little butter in a nonstick skillet, remove the pierogi from the water shake dry and pan fry until light brown and crispy.

5. Serve with sour cream, green onions, hot sauce.. whatever you want


Tastes just like a polish grandmother spent hours in a kitchen. Just don't tell anyone its actually only leftovers.

P.S. I got a brand spanking new camera. A Canon PowerShot SX210. It's not my dream SLR, but it is an awesome compact camera and I am looking forward to bringing you all great pictures to accompany my posts.
